How to make Strawberry Crush
|Strawberries,Sugar,Sodium benzoate,Citric acid,Strawberry essence,|
|1. Make sugar syrup with one kilogram sugar and half a litre of water. Crush strawberries in a food processor taking care that the pulp does not become too fine.|
|2. Mix sodium benzoate in a little water and set aside. Add half of the citric acid to the syrup. The scum will rise to the top. Strain through a strainer lined with muslin cloth to remove impurities.|
|3. Cool syrup slightly and add remaining citric acid, crushed strawberries and mix well. Add strawberry essence and stir. Add dissolved sodium benzoate to the mixture and stir well.|
|4. Pour into dry and hot sterilized bottles taking care not to fill them up to the rim. Screw on the tops and let them cool down to room temperature before storing.|

|1 cup strawberries|
|3 cups water/sparkling water|
|2 tbsp. maple syrup (or honey)|
|1 tbsp lime juice (optional, use to balance sweetness of strawberries.)|
|1. Mix all ingredients with 1 cup of water in a blender.|
|2. Puree them for 10 seconds.|
|3. Pass the mix through a sieve, separating the fruit pieces/seeds.|
|4. Add remaining water, serve chilled with ice and small pieces of strawberries.|

|Sugar - 200 gm|

|1. Wash, clean & cut strawberries into 1/4. Take out half the strawberries & grind them to a puree. Keep it aside.|
|2. Take a deep vessel. Put another half of the strawberry pieces in it. Add sugar & heat until the sugar melts.|
|3. Once the sugar melts add the strawberry puree to it. Stir thoroughly and bring it to a boil.|
|4. Remove the vessel & allow it to cool down. Your strawberry crush is ready. Store it in a glass container.|
|5. Make strawberry milkshake, thick shake, or mix it with plain vanilla ice cream.|
4. Strawberry Crush
Forget crush, this non-alcoholic strawberry and ginger soda has turned into a full-blown love affair.
|3 strawberries, cut in half|
|3 mint sprigs|
|Juice of 1 lime, freshly squeezed|
|1 ounce simple syrup|
|Ginger beer, to top|
|Garnish: mint sprig|
|1. In a shaker, muddle the strawberries, mint, lime juice and simple syrup to a juicy pulp.|
|2. Pour (unstrained) into a tall Collins glass.|
|3. Fill with crushed ice and top with ginger beer.|
|4. Garnish with an additional strawberry and mint sprig.|
5. Strawberry Crush
Recipe to make Strawberry crush using fresh strawberries at home. Great to make cocktails and mocktails. Can be stored for up to 1 month.
|1.5 lbs (~750 grams) Fresh Strawberries|
|1 cup Granulated Sugar|
|½ teaspoon Citric Acid*|
|2 cups Water|
|1. Thoroughly wash the strawberries and dry them. Cut the tops off and depending on the size of the berries, either halve or quarter them.|
|2. Place the chopped berries in a large bowl. Add the sugar and mix well. Cover and put the bowl in the fridge overnight.|
|3. Next day take the bowl out of the fridge. Using a slotted spoon remove the strawberries out of the sugar syrup and place them in a food processor or blender. Blend into a smooth puree.|
|4. Transfer the strawberry infused sugar syrup to a medium size saucepan. Add water and mix well. Put the pan on medium heat and bring the mixture to a boil. Lower the heat and simmer for 15 minutes. Stir in citric acid, mix well to incorporate. Turn off the heat and let the mixture cool completely, about 45 minutes ~1 hour.|
|5. Once the sugar syrup is completely cool, add the strawberry puree and mix well to combine. Strawberry crush is now ready to use.|
|6. Pour the crush into clean glass or plastic jars and store in the refrigerator.|
|7. To make Strawberry Juice:|
|8. To make juice, combine 1 part strawberry concentrate with 1~1½ parts water. So for 1 cup of concentrate, add about 1~1½ cups of chilled water or soda. Mix well and enjoy!!|
