1. Vegan Qutab with Spring Greens (Azerbaijani Stuffed Flatbread)
Vegan Azerbaijani flatbread stuffed with delicious juicy spring greens.
|125g all-purpose flour|
|2 tbsp aquafaba|
|2-3 tbsp water|
|pinch of salt|
|125g greens and herbs of your choice (ramson, sorrel, spinach, parsley, scallions, cilantro, dill, mint)|
|1 tbsp olive oil|
|salt and black pepper to taste|
|more oil for brushing|
|1. Wash the greens beforehead and let them dry.|
|2. In a large mixing bowl combine flour, pinch of salt and aquafaba. Add water, starting with 2 tablespoons first. Knead the dough and add more water if it's too dry. The dough should be very stiff.|
|3. Cover and let it rest for 30 minutes. The dough will become softer and more elastic after resting.|
|4. Meanwhile chop the greens. When you're ready to form qutabs, mix it with olive oil, salt and pepper.|
|5. Heat a cast iron pan over medium to high heat.|
|6. Divide the dough into 4 equal pieces. Roll out each one into very thin circle, as thin as you can.|
|7. Spread quarter of the filling onto a half of the circle and fold it so it has shape of a half moon. Press the edges and transfer qutab into the skillet.|
|8. Cook qutabs for 1-1.5 minutes on each side. Remove from the pan and brush with olive oil.|
|9. Serve right away with vegan yogurt or on its own as a side dish.|
2. Qutab (Azerbaijani Stuffed Flatbread)
A recipe for Qutab (Azerbaijani Stuffed Flatbread) from the cookbook, Kaukasis! This thin flatbread is packed with a lamb, onion, and molasses filling and panfried.
|200 milliliters (7 fl oz, ~3/4 cup) cold water|
|1 egg (lightly beaten)|
|Pinch of fine sea salt|
|500 grams (1 pound 2 ounces, ~3 1/2 cups) plain flour (plus extra for kneading and dusting)|
|350 grams (12 ounces) minced lamb (or a 50/50 mix of minced beef and pork)|
|150 grams (5 1/2 ounces) onions (finely diced or grated)|
|1 tablespoon ground cumin|
|1 tablespoon ground coriander|
|1 tablespoon dried mint|
|1 tablespoon pomegranate molasses|
|1 1/2 teaspoons fine sea salt|
|Melted unsalted butter (for brushing)|
|Ground sumac (for sprinkling)|
|1. To make the dough:|
|2. Mix the measured water, egg and salt together in a bowl, then gradually add the flour, combining it with your hand. Tip the dough out on to a well-floured work surface and start kneading it. The dough should be firm but not too dry and should stop sticking to your hands after kneading in some extra flour.|
|3. Divide the dough into 10 ball-shaped pieces and leave to rest in the refrigerator for 30 minutes, covered with a damp tea towel or clingfilm.|
|4. To make the Lamb, Onion & Molasses Filling:|
|5. Mix all the ingredients (except the butter and sumac) together.|
|6. Test the filling for seasoning by frying a little piece of the mixture in a small pan until cooked through and then tasting- it should be well seasoned.|
|7. Roll out each piece of dough on a lightly floured work surface as thinly as you can into a 20 cm (8 inch) round.|
|8. Spread 50 grams (1 3/4 ounces) of the filling on the bottom half of each round, then fold the top half over the filling and pinch the edges together to create. half-moon shape.|
|9. Heat a large frying pan until hot- don't use any fat, as we are dry-frying here. Add 1-2 qutabs and cook over a medium-high heat for 2-3 minutes on each side until the flatbread is golden and speckled with dark blisters. If you are using a raw meat filling, try to cook the qutabs at a slightly lower temperature, making sure that the filling is thoroughly cooked through.|
|10. Brush the cooked qutabs with a little melted butter as soon as they come out of the pan and sprinkle over some sumac.|
3. Qutab Recipe - Flat Bread Filled With Green Onion and Cheese
Qutab or Kutab (also knwon as chudu) is a flat bread filled with different kinds of fillings. In this recipe I made vegetarian qutab filled with green onion, herbs and cheese. Qutab Is an Azerbaijani dish and very popular all over the Caucasus.
|5 cups (625g) flour|
|1¾ cups (420ml) water|
|2 teaspoons salt|
|2 tablespoons oil|
|500g (17.6oz) green onion|
|1 bunch parsley|
|1 bunch coriander|
|1/2 bunch dill|
|300g (10.5oz) hard cheese of your choice|
|1 teaspoon salt|
|1 teaspoon pepper|
|Butter for brushing|
|1. 1. In a large bowl combine flour, salt and oil. Add water and mix until dough is formed. Add more water if the dough is to dry or more flour if to sticky. Knead the dough for 4-5 minutes, until soft and elastic. Cover the dough and let rest while you make the filling. 2. Roughly chop and green onion and herbs. Place in a large bowl. Crumble or grate in the cheese, season with salt and pepper and mix well. 3. Divide the dough into 12 equal pieces and shape them into balls. roll each ball into circle 20-22cm (7-8-inch) in diameter. 4. Fill half of the circle with the filling, leaving little bit space at the edges. Fold the dough and press with your fingers. Cut the edges with a knife or a pizza cutter. Repeat with remaining dough. 5. Heat a dry large pan or cast iron skillet over medium heat, place the flat breads and cook about 3 minutes on each sides or until golden brown. 6. Remove from the pan and immediately brush with butter.|
4. Qutab (Azerbaijan)
Qutab is a savory crepe from Azerbaijan. The only qualifier to this dish is that the crepe must be filled with herbs. After that, creativity is welcome! Try different meats, cheeses, herbs, or spreads and discover your favorite Qutab combination.
|1 cup all purpose flour|
|1 cup wheat flour|
|¼ tsp salt|
|1 tbsp oil|
|1.5-2 cups boiling water (as needed)|
|2 cups spinach (1 bunch)|
|½ cup feta|
|3 stalks chives|
|2 tbsp mint|
|2 tbsp dill|
|1 tbsp Lemon juice|
|¼ white onion|
|2 tbsp cilantro|
|2 tbsp yogurt|
|¼-½ cup pumpkin depending on preference|
|1/4 cup onion (chopped)|
|Make the Dough:|
|1. Mix both types of flour together and add the salt.|
|2. Boil the water on the stove. Slowly pour the water into flour until you have a ball of dough that is wet and holds itself together but is not sticky.|
|3. Allow the dough to cool, then add the oil and knead the dough until soft. Cover and leave to rest for about half an hour.|
|4. Filling and Assembly|
|5. In a medium pan, sauté the chopped onion and the chives together.|
|6. Once translucent, add the spinach and the lemon juice and sauté until wilted. Remove from the heat and add the rest of the filling ingredients except for the pumpkin. Stir to combine.|
|7. Separate dough into quarters. Flour a surface and use a rolling pin to roll the dough into a circle, flouring as necessary.|
|8. Heat a cast iron skillet over medium heat. Drizzle the skillet with oil and lay the circle of dough on the skillet.|
|9. Spread pumpkin puree on one half of the dough and then layer 2 tbsp of filling on the dough. Fold the dough in half and press the edges together.|
|10. Cook until the dough becomes crispy and browned, then flip and cook the other side. Repeat until ingredients are gone.|
|11. Serve with plain yogurt as a dipping sauce on the side.|
5. Qutab | Kutab | Azerbaijani Stuffed Flatbread
Qutab | Kutab | Azerbaijani Stuffed Flatbread is a popular breakfast recipe and the choices for filling can be unlimited. I made mine with Onion and Cheese filling with some fresh herbs and served it for weekend brunch.
|1 cup Whole wheat flour|
|1 cup All Purpose flour|
|1/2 tsp Salt - 1/2|
|3 tbsp Oil|
|3 cup Boiling water (about 3 to 4 cups or as needed)|
|1 cup Paneer (or any crumbled cheese)|
|1/2 cup Onion (finely chopped)|
|3 Spring onion (finely chopped with the greens)|
|1/4 cup Mint leaves (chopped)|
|1/4 cup Cilantro (chopped)|
|2 tsp Crushed red pepper flakes (or as needed)|
|Salt (to taste)|
|1. To make the Dough -|
|2. Boil about 4 to 5 of water in a pan.|
|3. In another pan combine the flours and the salt.|
|4. Slowly add the boiling water and stir with a wooden spoon. Keep adding water until a solid mass forms. At this stage cover the dough for few minutes to cool down enough to handle.|
|5. Now add the oil and knead the mixture into a soft dough. Sprinkle more warm water if needed.|
|6. Cover the dough and let it rest for about 30 minutes.|
|7. To make the Filling -|
|8. Heat oil in a pan and saute the onions and spring onions until just soft and translucent.|
|9. Add the salt and crushed red pepper to this mixture and mix well.|
|10. Let this mixture cool down and then add the grated / crumbled paneer, chopped mint and cilantro and mix well to combine.|
|11. To shape and cook the Quatab -|
|12. Divide the dough into 8 equal pieces.|
|13. Dust each ball with enough flour and roll it into very thin circle. Place about 2 TBSP of filling on one half of the rolled dough and cover it with the other half.|
|14. Seal the edges well and cook it on a hot cast iron or a heavy pan. Apply oil on both sides and cook until golden brown.|
|15. Let it cool a bit and then serve.|
