|1 (20 ounce) can pineapple chunks|
|6 tablespoons all-purpose flour|
|0.5 cup white sugar, or to taste|
|2 cups shredded sharp Cheddar cheese|
|1 (20 ounce) can crushed pineapple, drained|
|40 buttery round crackers (such as Ritz®), crushed|
|0.5 cup butter, melted, or to taste|
|1. Preheat an oven to 350 degrees F (175 degrees C).|
|2. Drain pineapple chunks, reserving 1/4 cup of the juice. Transfer both chunks and juice into a large bowl.|
|3. Add flour, sugar, Cheddar cheese, and drained, crushed pineapple; mix to combine. Pour into a 1 1/2-quart casserole dish.|
|4. Mix cracker crumbs and melted butter in a small bowl; sprinkle over pineapple mixture.|
|5. Bake in the preheated oven until golden brown, about 30 minutes.|

|1 cup (4 oz.) Sargento® Shredded Sharp Cheddar Cheese - Fine Cut|
|32 butter flavor crackers, crushed|
|1/4 cup butter, melted|
|1. Stir together flour, sugar, baking powder and salt in large bowl. Drain pineapple; reserve juice. Pour 1-1/2 cups juice into flour mixture. (Reserve remaining juice.) Stir pineapple and cheese into flour mixture; mix well. Transfer batter to greased 13x9-inch baking pan; cover with foil. Bake in preheated 350°F oven 30 minutes. Uncover; stir mixture. Return to oven; bake 10 minutes.|
|2. Stir together crushed crackers and melted butter in small bowl. Sprinkle cracker mixture over baked pineapple mixture; return to oven and bake 30 minutes. Let stand 30 minutes before cutting; serve warm.|

|1/2 cup sugar|
|1 (20 ounce) can pineapple tidbits drained (see notes)|
|1 (20 ounce) can crushed pineapple drained (see notes)|
|1 cup shredded sharp cheddar cheese|
|1 cup shredded white cheddar cheese|
|1/4 cup butter melted|
|40-50 Ritz crackers crushed (or other buttery crackers)|
|1. Preheat oven to 350 degrees. Grease a 9 inch square or 1 1/2 quart baking dish.|
|2. Whisk together flour and sugar together. Stir in the pineapple and cheddar cheese. Spoon the contents into a prepared casserole dish.|
|3. Combine the melted butter and crushed crackers. Sprinkle on the top of the dish. Bake for 35-40 minutes or until the cracker crumbs are golden brown and the casserole is heated through. Serve promptly.|
5. Pineapple Au Gratin
This recipe originally came from my mom's baby sister, Aunt Clara. They both would be so proud that I have shared it with you. In my opinion, this dish compliments either ham or a pork roast very well. But it's good with any meal to me. LOL

|1 stick(s) butter or margarine, melted|
|2 cup(s) grated or shredded cheddar cheese|
|6-8 tablespoon(s) pineapple juice*|
|1. *Drain pinapple but BE SURE TO SAVE 6 to 8 TBSP OF PINEAPPLE JUICE.|
|2. Preheat oven to 350. Spray casserole or baking dish with Pam and set aside.|
|3. In a bowl combine flour and sugar. Fold in pineapple, cheese and juice. Pour into prepared dish and sprinkle with crumbled ritz crackers. Pour melted butter somewhat evenly on top and bake at 350 for approximately 30 minutes.|
|4. *You can use either 2 cans of crushed pineapple or 2 cans of pineapple chunks. I normally use 1 can of each.|
6. Gluten Free Pineapple au Gratin
Chunks of pineapple are married with shredded cheddar and a crunchy buttery cracker topping in Gluten Free Pineapple Au Gratin. Sounds weird, but you'll love it once you taste it!
|1 20-oz (567 g) can chunk pineapple|
|½ cup (100 g) granulated sugar|
|3 tbsp (26 g) Kim's all purpose gluten free flour blend ((a store bought blend may be substituted, but hasn't been tested))|
|1 cup (113 g) shredded sharp cheddar cheese ((freshly shredded is best, but pre-shredded will work))|
|32 gluten free Ritz style crackers ((store bought will also work))|
|4 tbsp (57 g) butter, melted|
|1. Preheat oven to 350° F.|
|2. Drain pineapple chunks and reserve juice. Mix pineapple and cheese together in a casserole dish (I used a 9 by 9-inch square).|
|3. Mix reserved pineapple juice, sugar, and flour and pour over pineapple and cheese.|
|4. Crush crackers into crumbs in a large ziptop bag with a rolling pin (or something similar) and sprinkle over top. Pour melted butter over crumbs.|
|5. Bake for 25-30 minutes, or until crumbs are light golden brown. Serve warm as a side dish or appetizer. Recipe can be doubled easily and placed in a 9 by 13-inch rectangular baking dish.|
