1. Meringue Cookies
Meringue Cookies are crispy and light cookies made with only 4 ingredients that are perfect for using up leftover egg whites!
|5 egg whites (room temperature)|
|1 tsp vanilla extract|
|1 1/2 cups granulated sugar|
|1 lemon slice|
|1. Preheat oven to 220F.|
|2. Make sure your bowl and whisk are completely clean and the egg whites don’t have any egg yolk in them. Line two baking sheets with parchment paper.|
|3. Wipe the inside of the stand mixer bowl and the whisk with the lemon slice.|
|4. In a stand mixer fitted with the whisk attachment, whisk the egg whites and vanilla extract at medium-high speed until the mixture forms soft peaks.|
|5. Slowly add the sugar, about 1 Tablespoon at a time, with the mixer running and beat well after each addition until all the sugar is incorporated.|
|6. Once all of the sugar has been added, beat until sugar has just dissolved and the mixture is glossy and stiff about 4 minutes. The sugar should be completely dissolved and the mixture should not be gritty if you rub it between your fingers. It should not be dry, avoid overmixing.|
|7. Spoon the meringue into a large pastry bag fitted with a large star tip. Pipe 1.5-inch cookies onto the lined baking sheets, leaving 1 inch between each cookie. They will increase in size a little bit as they dry out.|
|8. Bake for 60 minutes, then turn off the oven and leave the cookies in the oven (don’t open the door) until they are cool so they dry out completely. The cookies should be crisp on the outside, lift from the baking sheet without sticking. and sound hollow when tapped on the bottom.|
|9. As soon as the meringue is cool, transfer the cookies to an airtight container.|

|1 pint ice cream|
|2 large egg whites|
|1/4 cup granulated sugar|
|1 teaspoon cream of tartar|
|1. Cut brownies into squares, about 3x3 inches in size. You can leave them in square shape, or cut into brownie circles, if you prefer.|
|2. Next, scoop your favorite ice cream over the brownie, and then shape into an ice cream dome. Place brownie and ice cream in freezer while you make the meringue topping.|
|3. In a medium bowl, beat the egg whites until small glossy peaks form. Slowly add the white sugar and cream of tartar to the egg white mixture. Keep beating until a glossy stiff peak forms and the mixture thickens.|
|4. Remove brownie and ice cream from freezer. Use a spatula or wooden spoon to spread swirls of meringue, to completely coat the ice cream and brownie, covering on all sides, leaving peaks of meringue.|
|5. Place each dessert in the air fryer basket, lined with air fryer parchment paper, a small baking dish or in small ramekins that will fit in your air fryer basket.|
|6. Air fry at 400 degrees F for 3-5 minutes, until the meringue is golden brown and firm.|
|7. Serve immediately or freeze. (Freezing may make the meringue lose some of it's crisp)|

|215g (1 cup) caster sugar|
|2.50 gm cornflour|
|1 tsp white vinegar|
|4.40 gm vanilla extract|
|Whipped cream to serve|
|Raspberries, to serve|
|Cadbury Caramilk chocolate, peeled into curls, to serve|
|1. Use electric beaters to whisk the egg whites in a clean, dry bowl until firm peaks form. Add the sugar, 1 tbsp at a time, whisking constantly until the mixture is thick and glossy. Add the cornflour, vinegar and vanilla and beat until just combined.|
|2. Tear two 38cm sheets of baking paper. Spoon the mixture onto one sheet of baking paper. Use the back of a spoon to shape the meringue into an 18cm disc. Make an indent in the centre. Place the remaining piece of baking paper into the air fryer basket. Carefully lift the baking paper with the meringue into the basket, placing the paper at right angles to the first piece.|
|3. Air fry at 120°C for 30 minutes. Remove the air fryer drawer. Set the pavlova aside in the basket for 20 minutes to cool slightly before transferring to a wire rack (with the baking paper) to cool completely.|
|4. Use a large palette knife to carefully transfer the pavlova to a serving plate. Top with whipped cream, raspberries and Caramilk. Dust with icing sugar to serve.|
