This grain-free Zucchini Lasagna uses zucchini slices in place of pasta but is still full of lasagna flavor and satisfying. It’s a fresh take on a comfort food classic!


1.5 pounds zucchini 2 medium/large zucchini
1.5 tsp olive oil divided
3/8 tsp salt divided
1 cup ricotta cheese
1 tsp Italian seasoning
1/2 tsp garlic powder
1/4 tsp red pepper flakes
1 cup tomato sauce no salt added
3/4 cup shredded mozzarella cheese
