New York Style Instant Pot Cheesecake

This instant pot cheesecake is easy to make, it starts with a buttery graham cracker crust, topped with a velvety smooth cream cheese mixture and then pressure cooked for a little less than an hour. It’s also perfect for dinner parties or during the holidays

INGREDIENTS

GRAHAM CRACKER CRUST:
3 tablespoons sugar
5 tablespoons butter
9 large graham crackers, pulsed into crumbs
2 tablespoons ground pecans
1/4 teaspoon cinnamon

CHEESECAKE FILLING:
12 ounces cream cheese (or 1 1/2 packages)
1/4 teaspoon kosher salt
2 teaspoons lemon zest
2 teaspoons vanilla extract
1 tablespoon cornstarch
1/2 cup + 2 tablespoons granulated sugar
2 large eggs + 1 egg yolk
1/2 cup sour cream
